Over the past few years I've heard how great coconut oil is. I use it in everything from baking to smoothies, not to mention other household uses. However, recently I've read a few articles that claim coconut oil isn't as healthy as we all think and that the fats in it are not "healthy fats." I don't want to believe this (noooooo!!!!!) and of course it conflicts with other articles/books I've read. Thoughts?

Ha! I understand your concern, which I why this is going to be one of my next posts! In short, coconut oil IS healthy. It does contain saturated fat, which is the least healthy of the fats, BUT there is a place for them in our diet. We always have to look at the source, which in this case was the American Heart Association. I'll dig deeper into what studies they did and why in the featured post! Until then...oil on.
